Street Tacos from a Shipping Container

The 1,000 SF tenant finish of Vatos Tacos & Tequila within The Exchange development was completed inside and adjacent to a 20×20 shipping container. There were unique challenges associated with construction inside a shipping container including outfitting the space for a full commercial dining operation. Fitting the commercial kitchen hood under the low ceilings and the mechanical, electrical and plumbing above required extensive coordination with trades and creative solutions to ensure the end product met the clients’ requirements.

In addition to a small inside seating area, this project included a covered patoi that overlooks the central plaza.

Brinkman Construction has completed three additional locations for this client, including Blue Agave Grill locations in Fort Collins and Denver, as well as Palomino Restaurant in Loveland.
